Abstract

The cow's milk produced in the dairy herds of the municipality of Ilobasco in the department of Cabañas, El Salvador, was analyzed during the months of August to December 2020.

For this, eleven dairy herds were selected in order to know the infrastructure, the dairy breeds, their nutrition and the application or non-application of good milking practices. Likewise, physical-chemical and microbiological analyzes were carried out that allowed determining the quality level of the milk; as well as classifying dairy herds.

It was found that 54% of the herds subject to the study produce grade "A" milk, a classification based on the time of six hours or more for the degradation of methylene blue.
