Microbiological contamination of chicken meat in 43 supermarkets in El Salvador

Abstract

Objective. To determine the presence of Salmonella spp, E. coli y S. aureus in fresh chicken meat from supermarkets. Methodology. This is a cross-sectional study. 302 samples fresh chicken meat were collected from 43 supermarkets estimate with a statistical error of 5.9%.
Results. The samples of fresh chicken meat showed a presence of 56% of Salmonella spp, 14% of E. coli and 13% of S. aureus.
Conclusions. There is an important microbiological contamination of fresh chicken meat that evidences some failures in the food production chain. The presence of these microorganisms represent a public health concern to consumers. Therefore, will be very necessary to improve the good practice for food handlers.
