In Central America, the grain of Phalaris canariensis is imported as food for ornamental birds, there are no references that it is processed for human consumption. The seeds have a large number of medicinal virtues such as control of: obesity, triglycerides and blood pressure. This article shows that the canary seed milk, although it is a product that is already sold in exclusive markets, has the potential to be produced in small local industries. This thematic review, carried out on a specialized database, will be a contribution to new agribusiness ventures in the region that want to produce new healthy and nutritious foods.
